Bulgarian cuisine is a rich tapestry of regional identities, far more complex than the famous Sharena Salt. To celebrate our national heritage, we have dedicated ourselves to exploring the forgotten recipes and traditions of our land. Last year, we launched a special series of products crafted with immense love and effort: “Taste of Bulgaria.” While Bulgaria is often associated with the scent of the rose, it possesses a myriad of deep, savory flavors that deserve to be preserved and shared with the global culinary community.
Our research led us back to a turning point in the 1950s. The rise of mass public catering and standardized state recipes simplified Bulgarian cooking for the sake of efficiency. While this structured our cuisine for the first time, it also caused significant “flavor damage” by reducing most recipes to a basic combination of savory and paprika.
We went a step further, digging into local gardens and old family notebooks to find the “hidden” herbs—the traditional merudii—that define our regions.
Seven Regional Spice Mixes: A Culinary Journey
The result of our journey is a collection of 7 unique spice blends, each representing a specific Bulgarian territory:
1. Shopski Spice mix
Inspired by the Shopluka region surrounding Sofia, this blend reflects the traditional culinary conservatism of the area. It is delicate yet distinct.

2. Rhodopa Spice mix
Capturing the mystery and mysticism of the Rhodopa Mountains, this blend is earthy and deep.

3. Pirin Spice mix
A blend influenced by the bold traditions of Bansko and Razlog. It reflects the spirited temperament of the Southwest.

4. Thracian Spice mix
A rich, universal vegetable blend as fertile and diverse as the Thracian Valley itself.
- Key Ingredients: Dried carrots, sweet peppers, parsnips, garlic, parsley, and savory.
- Best For: Soups, vegetable stews, and adding body and depth to any daily dish.
5. Danube Spice Mix
In Central Northern Bulgaria, Taros (from the Tarragon family) is the king of the garden. It is found in almost every backyard and every soup along the Danube.
- Key Ingredients: Taros (Tarragon ), mustard, dill.
- Best For: Authentic catfish soup, sweet water fish, chicken with rice, or chicken soup.
6. Balkan Spice Mix
We couldn’t overlook Fenugreek seeds, the soul of Bulgarian Sharena Salt. We balanced its intense aroma with parsley, mint, and savory for a refined finish.
- Key Ingredients: Fenugreek seeds, parsley, spearmint, and savory.
- Best For: Any traditional Bulgarian recipe where you seek a classic but sophisticated aroma. Pairs well with pork, potatoes and beans.
7. Black Sea Spice mix
True Black Sea fish soup is unthinkable without Lovage. This blend is strong and characterful, like the rocky northern shores.
- Key Ingredients: Lovage, celery leaves, and local herbs.
- Best For: Fish soup, mussels, grilled fish, but also surprisingly excellent with beans and beef.
