Jamaican cuisine
Jamaican cuisine is a unique blend of African, Spanish, British and indigenous influences. It is known for its aromatic and spicy dishes, which include fresh local produce and fresh herbs and spices. Jamaican dishes feature bold, spicy flavors and fresh, seasonal ingredients. One of the most iconic Jamaican dishes is jerk chicken, which is chicken, marinated in a mixture of spices like thyme, allspice and cloves, as well as the famous scotch bonnet chili pepper, then grilled or oven roasted until juicy and aromatic.
Jamaican cuisine includes a variety of soups and stews, such as pumpkin soup and callaloo soup. These dishes are made with fresh ingredients and cooked slowly to allow the flavors to blend. Rice, peas, yams and fried dumplings are often served with stews and curries.
Jamaican cuisine is heavily influenced by local seafood. The popular dish Escovitch Fish is fried fish with spicy sauce, and Ackee and Saltfish is a traditional dish made with salt cod, onions, peppers and the ackee fruit, which is native to Jamaica.

Jerk shrimps
Ingredients
- 1 kg raw shrimp
- 1 tbsp. Jamaican Jerk spice mix
- 2 tbsp. soy sauce
- 2 green onions
- 3-4 garlic cloves
- 1 tbsp. honey
- lime
- oil
- salt and black pepper
- chilies (optional)
- basmati rice (as a side dish)
Preparation
- Clean the shrimp from the shells and veins. You may leave the heads and/or tails on.
Cooking
- In a blender mix garlic, onion, chillies (optional), juice of a lime, soy sauce, honey/sugar, 3 tbsp. oil, 1 tbsp. Jamaican Jerk Mix and 1 tsp. salt and stir to make a marinade.
- Coat the shrimps well with the marinade and let them sit for 30-60 minutes.
- Put the shrimp on skewers and cook them on high heat for 3 minutes per side - in a pan or on the barbecue.
- Serve with basmati rice, fresh salsa and fresh cilantro.
Jerk cauliflower
Ingredients
- 1 big cauliflower
- 1 tbsp. Jamaican Jerk spice mix
- 2 tbsp. soy sauce
- 2 green onions
- 3-4 garlic cloves
- 1 tbsp. honey
- lime
- oil
- salt and black pepper
- chilies (optional)
Preparation
- Break a cauliflower into florets and place them in a bowl. You can also cut a few thick slices like steaks.
Cooking
- In a blender mix garlic, onion, chillies (optional), juice of a lime, soy sauce, honey/sugar, 3 tbsp. oil, 1 tbsp. Jamaican Jerk Mix and 1 tsp. salt and stir to make a marinade.
- Add the marinade to the bowl with the cauliflower and mix well until all florets are well coated.
- Marinate for 15-30 minutes.
- Preheat the oven to 200˚C.
- Arrange the cauliflower on a baking tray and bake for 40 minutes, turning half way through cooking.
