Turkish cuisine
Turkish cuisine has been shaped over centuries by the influence of various civilizations including Persian, Roman, Byzantine, Ottoman and Arab. The result is a unique combination of flavors and ingredients, rich and aromatic dishes using fresh, seasonal vegetables, pulses, dairy products and spices.

Turkish chicken skewers (chicken shish kebab)
Ingredients
- 4 chicken thighs
- 300 g thick yogurt
- 1 tbsp. Turkish spice mix
- 1 tbsp. tomato puree
- 1 onion
- 3-4 garlic cloves
- lemon
- oil
- salt and black pepper
Preparation
- Cut the chicken legs into equal pieces.
- Coarsely chop the onion.
- Crush the garlic with a press.
Cooking
- Mix yogurt with onion, garlic, tomato puree, 1 - 2 tbsp. Turkish Spice Mix, juice of half a lemon, 2 tbsp. oil and 1 tbsp. salt.
- Stir well and marinate the chicken in the above mixture for at least 1 hour.
- Put the meat on skewers.
- Bake in a roasting pan with a rack for about 40 minutes on a maximum grill until the meat is browned and burned at the edges. Turn at least once while baking.
Turkish lentils
Ingredients
- 250 g red lentils
- 1 onion
- 3-4 garlic cloves
- 1 tbsp. Turkish spice mix
- 1 carrot
- oil
- lemon
- salt and black pepper
Preparation
- Wash the lentils well.
- Finely chop the onion, garlic and carrots.
Cooking
- Heat 2 tbsp. oil on medium heat and in it cook onion and carrot with a pinch of salt for 5-6 minutes.
- Add garlic and cook 1 minute.
- Pour in the lentils and 4 cups of water. Cook until fully cooked - about 10-12 minutes after boiling.
- Add 1 tbsp. Turkish Spice Mix and cook for 5 more minutes.
- Puree and add salt to taste. If necessary, add hot water and bring to a boil again.
- Serve with lemon and finely chopped parsley and/or mint.
