Thracian Spice mix

A versatile mixture of dried vegetables and herbs, rich in flavors and aromas and completely recreating the taste of Thrace. A universal helper in every kitchen. Add a spoonful or two to your soup or stew and it will be richer and tastier than anything you've tried so far.

    Thracian cuisine

    Thracian cuisine is extremely diverse in terms of ingredients, spices and recipes. Rich soups, casseroles and stews arе iconic for it. It uses lots of vegetables – tomatoes, peppers and especially eggplants.

    Thracian cuisine is influenced by Armenian and Turkish cuisines. Dishes such as Thracian kavarma, Thracian stew, Chirpan style meatballs, imam bayildi, türlü, güzleme, stuffed cabbage or vine leaves with bulgur, keskek and many others are popular in the region. A lot of rice is used since the Maritsa river and the high summer temperatures have turned the Thracian plain into the rice fields of Bulgaria. Also many beans and chickpeas are grown. Chicken, turkey and trifles are often used. Tripe soup and trifle sausages such as bumbar, typical of Plovdiv, are extremely popular. Lamb with drob sarma is also typical of Thrace. Sesame is grown in the region and halva, tahini and tarhana are traditionally produced.

    Chicken with Thracian spices

    • 1.5 kg chicken
    • 2 peppers
    • 3 tbsp. Thracian spice mix
    • 1 onion
    • 3-4 garlic cloves
    • 400 g tomatoes
    • oil
    • parsley
    • salt and black pepper
    • chilies (optional)
    1. Finely chop the onion, garlic and peppers.
    2. If using a whole chicken, cut it into portions.
    1. Heat 3 tbsp. oil at medium to high heat and seal the chicken pieces on all sides.
    2. Take out the chicken and in the same oil sweat the onion, peppers and optionally 1-2 chilies. Stir occasionally.
    3. Reduce heat to medium.
    4. Add garlic, 3 tbsp. Thracian Spice mix, tomatoes and some water if needed. Mix well and return the chicken to the pan.
    5. Cover with a lid and cook for at least 60 minutes till ready
    6. Serve sprinkled with finely chopped parsley.

    Tomato bake

    • 2 kg tomatoes
    • 3 tbsp. Thracian spice mix
    • 2 bunches of parsley
    • 1 cup breadcrumbs
    • oil
    • salt and black pepper
    1. Cut tomatoes into slices.
    2. Finely chop the parsley.
    1. Oil a baking tray. On the bottom spread a layer of parsley and then a layer of tomatoes.
    2. Evenly sprinkle the tomatoes with 2 tbsp. breadcrumbs and 2 tbsp. Thracian Spice mix.
    3. Add one more layer of parsley, one more layer of tomatoes and sprinkle with 2 tbsp. breadcrumbs and 2 tbsp. Thracian Spice mix
    4. Finish with a final (third) layer of tomatoes.
    5. Top with 1 tbsp. breadcrumbs and salt to taste.
    6. Drizzle evenly 1 cup olive oil.
    7. Bake in a preheated at 180°C oven for about 60 minutes.
    8. Serve sprinkled with finely chopped parsley.
