- Masa and Masa Harina: After thorough washing, the soaked kernels are ground to produce a dough-like consistency called Masa. Because fresh Masa ferments quickly (within 1–2 days), Masa Harina was created—a dried and ground version of the fresh corn mass that has a long shelf life.
- Colors and Baking: Depending on the variety of corn used, tortillas can be white, yellow, blue/grey or red. They are traditionally baked on a Comal—a heated ceramic plate.

- Accessibility: Due to being easier to produce and store, they have gained popularity worldwide and can be found in almost any large grocery store.
