Recipe for Traditional Moroccan Harira Soup
Ingredients:
- 500g beef or lamb, finely diced (or minced)
- 400g cooked chickpeas (canned is fine)
- 75g lentils
- 1 onion, finely chopped
- 400g tomatoes
- 2-3 celery stalks
- 70g small pasta (vermicelli or orzo)

- 1 egg (optional)
- Olive oil, a knob of butter, salt, and fresh lemon for serving
Instructions:
- Sautéing: Heat a little olive oil and a knob of butter in a deep pot and sauté the onion and celery. After 5-6 minutes, add the meat and cook until it changes color.
