1. Never Buy Ground Pepper

  • Only buy whole peppercorns and crush or grind them immediately before cooking.
  • This is the only way the pepper retains its full flavor and aromatic qualities.
  • Pro Tip: For cooking purposes, it is best to use coarsely crushed pepper.
    • If you do not have a grinder or mortar, simply place the grains on a cutting board and press them with the bottom of a pan or pot.

2. The Secrets of Heat Treatment

  • Never add finely ground black pepper during the cooking process, as it loses its aroma under heat.
  • For soups and stews: Use whole peppercorns.
  • For roasting, grilling, or frying: Use coarsely crushed pepper.
  • For finishing: Finely ground pepper should only be added to ready-to-serve dishes to provide a punchy flavor and fresh aroma.
    • This is exactly when you need your grinder!

3. Light is Enemy

  • Avoid buying black pepper in transparent packaging.
  • Light is one of the primary factors that destroys even whole peppercorns.
  • Store it in a dry, dark place, preferably in a tightly sealed, opaque box or jar.

4. Beware the Price Trap of Small Packages

  • The smaller the package, the higher the price per kilogram.
  • Always compare!
  • If a 10g pouch costs 1.20 BGN, that equals 120 BGN/kg.
  • If a 60g package costs 3.85 BGN, the price drops to 65 BGN/kg.
  • Buying a small disposable grinder with 35g of pepper for 7 BGN spikes the price to 200 BGN/kg. That is the price of elite varieties like Tellicherry or Kampot, which are certainly not what is inside those grinders.

5. Say “NO” to Disposable Grinders

  • Purchasing pre-filled disposable grinders is an unnecessary expense.
  • Retailers sell cheap mechanisms with low-quality pepper at high prices, hoping you will buy them regularly.
  • Save money by investing in one high-quality grinder and refilling it yourself.

6. How to Choose the Perfect Grinder?

  • Invest in a grinder with a ceramic mechanism or one made of stainless steel.
  • A good grinder must have an option to adjust the coarseness of the grind.
  • For home use, the most practical sizes hold between 50 and 100 grams. Enormous grinders may look impressive, but they are inconvenient for storage and daily use.

7. The “Rule of Two Peppers”

You should have at least two types of black pepper in your kitchen:

  • Basic Cooking Pepper:
    • Good quality (with a bulk density of about 540 g/l).
    • Buy it in quantities ranging from 100g up to 1kg.
    • Use it as whole peppercorns for soups, marinades, and winter preserves.
  • Premium Finishing Pepper:
    • A special variety with a density over 550 g/l, such as Indian Tellicherry, Pondicherry, Banasura, Malabar, or Cambodian Kampot.
    • Purchase it in small 40-50g packages, load it into your grinder, and use it exclusively for seasoning finished dishes or freshly grilled meats.
